Broccoli
Characteristics
Broccoli is the flower vegetable with the highest nutritional value per unit weight of edible product. It has a shape similar to cauliflower, but with less tight or compact floral peduncles, forming an irregular and open bouquet or head. The colour varies between purple, reddish, white or yellowish, the most common being the dark green on the stem and bluish green at the end of the head. Its intake offers a pronounced pungent taste.
